Channel some sunshine into your holiday with these delicious quick and easy cookies! When the winter blues hits we tend to be drawn towards sugary treats that don't leave us feeling too good after the initial sugar rush. These cookies are sweetened with maple syrup, so while they taste amazing they won't leave you crashing afterwards. The lemon gives an uplifting boost, while the ginger aids in digestion.
These cookies are vegan and gluten free- sure to please any of you, or friends and family working with dietary restrictions.
Prep time: 5 minutes Cook time: 8-10 minutes Makes: 2 dozen
Ingredients:
2 ½ cups almond flour/meal
1 tsp. baking soda
2 Tbsp. ground ginger (+optional 1 tsp fresh grated ginger)
¼ cup grape seed oil or melted coconut oil
½ cup maple syrup
2 Tbsp. lemon zest
Preheat the oven to 350 °F.
In a large bowl, combine the almond meal, baking soda and ginger.
In a medium bowl, combine the oil, syrup and zest. Add to the dry ingredients and mix until well blended. Scoop 1 Tbsp. of the dough onto a parchment-lined baking sheet.
Bake for 8-10 minutes, or until the tops brown.
